Or is that “pain grillé aux amandes”?

My latest kitchen experiment was borne out of wanting to avoid the restaurants on Mother’s Day. It’s right up there with Valentine’s Day as far as overcrowding and the antithesis of a relaxing, enjoyable meal. Luckily, I had recently borrowed The Superfun Times Vegan Holiday Cookbook from my local library, and had tons of inspiration.

I opted for almond-crusted French toast, and although “crusted” isn’t a super-appetizing word (it makes me think of the top of the ketchup bottle), this was delicious! It’s not my recipe to reprint, but it’s similar to this – only vegan, so coconut milk for thickening instead of eggs – although there’s no cinnamon in the mixture. Instead, add in some orange zest: the recipe called for a teaspoon, but I chose to zest until my orange was zest-less, because a little extra flavour never hurt anybody.

Speaking of unappetizing: there was something a little off-putting about soggy bread with almond slices stuck to it. I got all of my bread dipped and almond-ed while I waited for my pan to heat up, and seriously had my doubts before the first side turned golden brown.

But before long, we were cooking (ha! In more ways than one).

In a moment of inspiration, I peeled the orange who had so bravely given its zest to the cause and served it on the side as a juicy little amuse-bouche. Who knew that citrus could be so tasty outside of the usual season?

This couldn’t have turned out better. The orange flavour really came though in the toast, and the almonds provided a wonderful crunch. The best part? It takes less than half and hour to make, so this is a lot of impressiveness for such a short amount of time. I made some for a friend for lunch the following weekend, and it tastes just as good when you’re not trying to avoid crowds.

The next best thing to the deli

About a month and a half ago, when I was finally, tentatively exploring the freedom granted by rolled-back restrictions, I found myself in Indigo looking for a gift card for Ricky’s birthday. I can’t go into a bookstore and not look around, and while I was wandering through the magazine nook I saw an issue of Pioneer Woman magazine. Because I’m a good daughter, I bought it for my mom. Because I’m not a great daughter, I wound up reading it before she got a chance. Most of her recipes feature too much meat for my liking, but there, nestled in the middle, was a triad of recipes for savoury buns including these beauties.

Be still my heart! Unlike everyone else on the planet, I didn’t drop into hardcore baking mode last spring, but these looked too good to pass up. I hadn’t worked with a yeasted dough in forever, and this seemed like as good a time as any to get back into it. And with time off work over Easter, it felt like a great time.

The first thing I did was toast my sesame seeds over low heat. It started out feeling a bit like a zen garden as I continually moved them around the pan to ensure even toasting, but became decidedly less zen as I became impatient and increased the heat approximately every 75 seconds to speed it along. Miraculously, they didn’t burn, but developed a beautiful golden slightly-less-pallid colour.

My everything-bagel seasoning, all mixed and ready to go. Those huge patches of black are poppy seed, and not pepper (just in case you thought I liked living on the edge).

Once I made my dough and spread it with cream cheese and sprinkled it with about half my mix, it was time to roll these up and slice them. The one way I deviated from the recipe was to use my trusty 9″ x 13″ Wilton cake pan and not a 9″ pie pan as recommended. The pictures accompanying the recipe showed squished, stunted buns. (No pictures of the process, sorry; my hands were covered in flour and dough and cream cheese and I wasn’t about to start smearing that on my phone.) The tops got brushed with melted butter and sprinkled with the remaining seasoning mixture. Because I wanted these for breakfast and not a late-afternoon snack, I stopped at this point to cover my pan with plastic wrap and stick the whole works in the fridge rather than let them have their rise.

The next morning, I pulled them out of the fridge, removed the plastic wrap, and set them in a low oven with a cake pan of water for steam, until they looked like this. It was quite the relief to see them rise and puff up like that, because when I started making the dough the day before I had panicked that I had killed my yeast due to a difference in opinion of what constitutes “lukewarm”. It looks like I dodged a bullet, because these filled out beautifully.

These were so good! The dough was tender yet sturdy enough to hold the buns together, and the cream cheese and everything-bagel seasoning complimented each other perfectly. I probably could have scarfed the entire pan by myself, but instead I shared them and everyone who tried one had only good things to say. Although they’re marvy hot out of the oven, they’re just as good at room temperature – which isn’t something I can always say about cinnamon buns.

Now I think my next project will be the spinach and feta variation. It must be healthy if there’s spinach in it, right?

I found my thrill on blueberry hill…

or: What a Drag It Is Getting Old

Hey, guys?  This whole maturity thing is a buzzkill.  (Side question: do the Who still sing about hoping they die before they get old?)  Gone are the days of drinking-as-a-competitive sport, all-nighters, and greasy food whenever you darned well felt like it.

Okay, so I exaggerate somewhat – I was never much of a drinker – but this is my pity party, and I’ll embellish if I want to.

Last week, I made margarita cupcakes, and did I pile them high with swirls of tequila-lime-salt icing?  I did not.  I made a ridiculously small batch of icing, and demurely spread an even layer on each cupcake.  They still tasted fine, but didn’t feel as fun.

The weekend before that debacle, I saw a commercial for Robin’s Donuts new summer blended drink: a s’mores mocha.  My inner five year-old shrieked joyously, and the next day, I managed to con my friend into making a detour while we were out.  They had signs for it posted in the windows, and those marshmallows looked good enough to eat (obviously), and then I saw the nutritional information right beside the picture: “starts at 560 calories”.  I hate when people misuse the word “literally”, so when I say I literally froze, I mean it.  I wanted that chocolate-marshmallow-graham concoction so badly, and (with apologies to V.N.) what d’ye know, folks – I just could not make myself do it.  Cringing, I ordered a black coffee (and a Ghostbuster; I’m just old, not dead).

In light of these involuntary displays of maturity, I was intrigued by the recipe for Blueberry Oatmeal Muffins on Sally’s Baking Addiction.  I like oatmeal.  I like blueberries.  And no refined sugar?  Sign me up!

Sure, they’re sweetened with honey, and sure, a surfeit of sugar isn’t great for you no matter how natural the source, but honey is a lower GI sweetener, so I figure, it’s a trade-off.

The batter turned out super-thick thanks to letting the oats soak in the milk for the prescribed time.  This recipe makes great use of time: in the 20 minutes of soaking time, I had everything else pulled together, ready to add the oats and milk.  How efficient!

They baked up so nice and tall.  The whole house smelled like blueberry-oat-cinnamon magic (I did increase the cinnamon to about 1 tsp), and it was divine!

I really think these are no-fail.  I followed the recipe to a “T” (cinnamon notwithstanding), and they baked up perfectly, no overbrowning or mushy middles.

My test audience couldn’t keep their paws off these.  I’m told they’re wonderful with just a little smear of butter on each half, but are excellent naked, too.  If you haven’t already preheated your oven, do it now!

I’m sure my self-imposed health martyrdom – if you can really call less-frosted cupcakes healthy – will come to an end soon enough, but I’ve got this recipe in my back pocket the next time I need a healthy snack or dessert.

“M” is for “May” and “Mother” and “Meringue”…

Note: This post was originally written and meant to be posted on Sunday; however, because of some technical issues with WordPress first obscuring my photos and then abruptly deleting my entire text, there has been a slight delay.

My neighbours, who are DINKs (to clarify: very nice people, who happen to be Dual Income, No Kids), made the rookie mistake of going out for breakfast this morning.  The restaurant, they reported later, was absolutely packed.  You people have no children!  That’s a free pass from having to do the Mother’s Day brunch mob!  That’s one big advantage to not having kids!  Of course, the advantage to having children who are old enough to use the stove without summoning the local fire department is that you also get to avoid the crowds, and enjoy a home-cooked breakfast, possibly still in your pajamas.

I had mulled over a few ideas for what to make for breakfast, but decided to go with an old standby: giant(ish) baked apple pancakes, which I’ve posted on here before.  They come together really quickly, and yet look so impressive – because whoa, that thing’s the size of my plate!

The butter and brown sugar create a built-in syrup of sorts as it bakes, no maple required.  Fun fact: I once forgot to add the brown sugar to the pie pans before baking, and although they released super-easily, they were a little dry and not…quite…right.

I also wanted to make something for dessert, but not the same-old.  Cupcakes are nice, and all, but it’s been done.  While flipping through my collection of cookbooks, I found a recipe for flapper pie in the Kitchen Magpie’s book.  (Hardly surprising, since said book is titled Flapper Pie and a Blue Prairie Sky.)  The recipe took me a little bit out of my comfort zone, but seemed fairly simple, so I thought I’d give it a go.

Did I say “a little bit out of my comfort zone”?  This thing had me tense.  It was only the second time I’ve had to make a thick, pudding-like filling using cornstarch and heat as my catalysts (the first time was the pudding for my Brooklyn Blackout Cake), and I thought it was never going to thicken.  When it did, though, did it ever.  One minute, I was stirring what was in essence a pot of liquid, and the next it was producing a diabolical plopping sound as it came to a boil, and I’m pretty sure I could have gotten my spoon to stand up in the middle of it.  Also, I had never had occasion to make meringue before, and was convinced I would never get stiff peaks out of what seemed like fairly benign ingredients.  But lo (and behold!), the Kitchen Magpie did not fail me, and before long I was topping my pie and popping it into the oven to brown up.

It didn’t come out of the pan quite as neatly as I would have liked, but it did stay more-or-less intact, and tastes like it’s supposed to.  Certainly the Woman of the Hour was impressed – and that’s what matters, right?

Nothing says “I love you, Mom” like carbs

Did everybody have a great Mother’s Day?  It took me longer than usual this year to come up with a cohesive gift/meal plan, but luckily that all fell into place within the last week or so.

My original intention had been to make the Tiramisu Pancakes from Chloe’s Vegan Desserts, but then I saw the IHOP commercial touting their new Cupcake Pancakes and Red Velvet Crepes, and darn it, I was moved.  The nearest location to me that doesn’t require a passport still requires an overnight bag, so it was time to take matters into my own hands:

Behold: Confetti Pancakes, courtesy of the plain pancake recipe from Vegan With a Vengeance plus a handful of sprinkles thrown into the batter.  (Note that “plain” is a bit of a misnomer; the batter has cinnamon and maple syrup and vanilla in it for flavour before my own addition, and is wickedly delicious.)  And yes, that’s blueberry syrup drizzled on top.

My Birthday Cake Theory extends to Mother’s Day as well, so I whipped up a batch of chocolate cupcakes from VCTOTW last night and decorated them this morning.  Now, as I’ve gotten older and less cute, I’ve been replaced by a furry, four-legged little sibling, and he provided me with decoration-inspiration.

Mother’s Day – Better Late Than Never

Don’t worry –  I didn’t forget Mother’s Day.  I was oh-so-dilligent, producing a homemade card and breakfast.  I just had some…issues…securing appropriate photographs.

This is not one of the giant apple pancakes (à la Pancake House, but better!) I made last week.  Those got devoured within minutes of their hitting the table, and it wasn’t until we were halfway through that I remembered my camera was in the other room.  This is from a second batch, made today, and with camera close at hand.  It’s criminal how good these are, and how easy they are to make, too.  This may be my new special occasion recipe.

And it’s not Mother’s Day without a homemade card, is it?

I found the pattern in an issue of Cute Cross Stitch I bought last summer, and had pretty much hung onto the magazine specifically for this card collection.  I modified it a bit – made the kitty’s nose black to look like mine, and left off the tail since she’s a bobtail – and mounted it on some pink cardstock I had on hand.
